Oil Jefe's Kale Quinoa Super Salad

SERVINGS




  • 2 leafs green kale (stems removed)
  • 6 slices of Cucumbers
  • 1 carrot (grated)
  • 2 oz. Quinoa (cooked)
  • 1 organic peach (cubed into ¼ inch pieces)
  • ½ oz. organic micro greens
  • 1 tsp. Oil Jefe habanero chili oil
  • 2 tsp. apple cider vinegar
  • Salt and pepper TT
  • 1 tablespoon Cashew based parmesan
  • Chopped almonds
  • ½ oz. Hemp hearts
  • 1 cup of mixed beans (kidney, chickpeas, black)

Directions


  1. Thoroughly wash and trim all vegetables.
  2. De-stem the kale and cut into ½ inch slices
  3. Add cucumbers, carrots, quinoa, mixed beans into a mixing bowl.
  4. Add 1tsp habanero chili oil, and 2tsp apple cider vinegar, salt and pepper to taste. Mix well.
  5. Place in a salad bowl then top it off with hemp hearts, peaches, chopped almonds, parmesan (cashew based), micro greens.
  6. If you love the spice like I do sprinkle a little extra of that OIL JEFE on there! That's it. Enjoy!
